  2. Prepare 1 can cannellini beans, drained

Add one can of beans with juice and one can without, lettuce and salt and pepper. Serve in bowls and top with cheese. Italian Beans & Greens is a classic Italian dish. We use our meaty, tender Cannellini beans with savory escarole and sauté them together with bold garlic and red pepper flakes.

Instructions to make Greens and Beans:
  1. Chop the ends off the stalks of broccoli rabe, about one inch.
  2. Cook broccoli rabe uncovered in a pot of boiling salted water until slightly softened, about 3 minutes. Drain and set aside.
  3. Sauté garlic and red pepper flakes in olive oil until almost blackened.
  4. Stir in the broccoli rabe and cannellini beans and continue sautéing until heated through. Add salt to your liking.
  5. Serve immediately with a loaf of crusty Italian bread.

Some like to add slices of sweet Italian sausage to this Italian Beans & Greens mix… we say go for it! Transfer to a colander as done and drain well. Add broth to skillet and deglaze, scraping up any browned bits. And "greens and beans" was a catchy name they liked too. I briefly cooked the onions in the olive oil.
